I just love the taste of almond paste, especially when it is combined with fresh fruit in a dessert. So, when I needed to whip up a summer dessert I decided to bring that almond elegance into my Lazy Lady tart formula and it was an absolute hit! Luscious slabs of almond paste layered onto this no-bake tart crust topped with créme fraîche give a rich, yet refreshing foundation for the fresh summer berries atop. This tasty elegant dessert is made with just 4 ingredients from the grocery store {7 if you include the fruit}, but maybe there is something out on your tree you could use? Any fresh fruit will do! Read on to see the latest in the lazy lady tart trilogy!

Ingredients about 2 cups of berries or sliced fresh fruit 12 full graham crackers, finely crushed {or 1 3/4 cup crushed graham crackers} 8 tablespoons Tillamook sea salted butter 8 oz. Créme Fraîche {or sour cream} 8 oz. pure almond paste

Preparation Place graham crackers in a sealed plastic bag and use a rolling pin or bottle to finely crush them.

Melt the butter in a sauté pan, then add the crushed grahams to the butter and stir until crumbly.

Pour the buttery crumbs into a 9" springform pan and use a measuring cup to press the crumbs down and create lip around the rim of the pan. Cover the crust with plastic wrap and give it a final "smoothing". Store in the refrigerator until ready to use, chilling it for at least 2 hours and up to 3 days.

Slice the almond paste to about 1/2 centimeter.

When crust is chilled and you are read to serve, line the bottom of the tart with the almond paste slices and smooth the créme fraîche over the top.

You can use any fruit you'd like to top this filling. I started with fresh garden strawberries, cut in half around the perimeter of the springform pan.


Then placed ripe raspberries in the center.

Finally, I scattered about 2 handfuls of fresh, washed blueberries between the other 2 berries.

This was the perfect dessert for a special birthday boy and everyone at the table loved it!
