A fresh fruit tart is a great way to enjoy the summer fruits as they reach their peak. This tart comes together so easily with just just 5 ingredients you can buy at the grocery store, and you don’t even have to turn on the oven!
Ingredients 1 - 3/4 cups graham cracker crumbs {about 12 full graham crackers finely crushed} 8 tablespoons Tillamook salted butter, melted 12.5 ounces {one can} solo almond cake and pastry filling 8 ounces sour cream or creme fraiche 2 cups fresh, washed blueberries Preparation Melt the butter in a small pan, add graham cracker crumbs to melted butter and stir to create a crumbly mix.
Pour graham cracker mix into a 9″ springform pan and use a mixing cup to press down the crumbs and create a lip around the rim of the pan.
Cover the “crust” with plastic wrap and give it a final “smoothing” with your hands. Then put the pan in the refrigerator and allow to chill for at least 2 hours and up to 3 days.
When you’re ready to fill the tart blend together the Solo almond pastry and cake filling and the sour cream or creme fraiche in a medium mixing bowl.
When it is thoroughly mixed scoop it onto the chilled crust.
Smooth the mixture over the entire surface of the crust.
Then scatter the blueberries {or the fruit of your choice} over the top of the filling and you’re ready to serve!
