Our peach tree on Orcas Island is loaded…
I mean absolutely loaded with fruit this year. Which means I get to indulge in my very favorite breakfast everyday with ease. This breakfast bowl is healthy, delicious and full of texture and flavor.
In fact, when served with a nice little cafe au lait this meal triggers all of the taste points on your tongue – sweet, sour, salty, bitter and umami (that wonderful earthy taste) naturally, now that’s something to wake up for!
Here’s how to put together all of those splendid tastes and textures with ease…
Start with slices of the ripest, freshest, peaches (or nectarines) you can find, this creates a colorful foundation of sweet, sour and earthy tastes.
Next, crumble on a layer of earthy, salty feta cheese.
And then top it off with slices of crunchy, toasted almond slices for a bit of bitterness and more umami.
Then stir it up, sit back and savor the symphony!

P.S. to add another fresh element of flavor top the bowl with torn basil leaves (like I did this morning) or parsley or tarragon or….. the possibilities are endless!
