There is zucchini GALORE in the gardens and markets these days. I absolutely LOVE the nutty flavor and tender texture of a nice sautéed zucchini. We’ve been up in Desolation Sound on The Glory for the past few weeks and this dish has become a reoccurring favorite with guests and crew, it’s a splendid side dish for breakfast, lunch or dinner. I cook it on a camp stove on the back of the boat and it is so easy!
I can’t really provide you with exact measurements here, because each zucchini and crowd is a different size. Just sort of wing it, and adjust to suit your tastes, this is a winning combination of ingredients so there is little chance it won’t turn out well for you.

As a very general guideline, looking at these images, I’d say one part zucchini to 2/3 part chopped chopped tomatoes and 1/3 part chopped onions.
Pour a tablespoon or 2 of olive oil into a suitable sized skillet and add the the zucchini when it gets hot.
Stir and flip the zucchini with a spatula to get some of the edges and peels lightly caramelized. Sprinkle liberally with coarse sea salt.
Sprinkle on red chili flakes and dried thyme leaves to taste.
When the zucchini is caramelized to your liking {color = more nutty, complex, toasty flavor} throw in the tomatoes and onions. Add in the garlic and stir. The tomatoes will release their juices and allow you to simmer the mixture for a bit which melds all of the flavors together. Taste and add more salt if you desire.
Finish cooking to your liking. It’s a funny life up here in the remote sections of the Northern BC coast, there are very few stores for provisioning. It’s always interesting to find different products to try. Everyone has been enthralled with this goat feta cheese I sprinkle over the top of the zucchini mix, It’s by Woolrich Dairy and their tag line is “honest to goatness”, if you ever come across this I’d highly recommend their “Simply fresh & totally delicious Canadian goat dairy from people who love what they do.”
