Most everyone loves a pickle, crunchy vegetables infused with flavors of herbs and tangy vinegars, but sometimes we don’t want to wait for weeks for this tasty treat!
Here is a quick, fresh pickle fix, perfect for a summer side dish in a snap.
When you find some beautiful, plump little summer cucumbers at a market or from a friendly gardener, add a few sprigs of herbs for a fresh pickle taste.
Ingredients
4 small cucumbers, peeled and sliced into spears and sprinkled with salt and white pepper to taste
5 sprigs tarragon
5 sprigs dill
4 tablespoons white wine vinegar
4 ice cubes
Preparation
Place cucumber spears in bowl or dish in which they can lie flat. Nestle herb sprigs in with spears.
Sprinkle vinegar over spears.
Top with ice cubes and place in refrigerator for an hour before serving.
