For the new year we have ventured out to explore South East Asia with a group of friends. To help concur our jet lag we stayed in the dark as long as we could the first morning, but by 6:30am I couldn’t stand it any more, so I pulled off my eye mask and headed out for a walk to the beach from our fabulous Capella Hotel.

From the beach we were able to use this rope bridge to access an island that is the southern most point of Continental Asia.
After cruising the busy beach area we hiked back up to the hotel to contemplate the extraordinary breakfast buffet
where I discovered a new favorite soup — Laska! It’s a spicy Malaysian coconut noodle soup and it is so deliciously complex and satisfying. Have you ever tried it?
This one was made with a bean curd, but you could make it with seafood or chicken. I topped mine with sliced green chilis, Sambal {a red chili paste} and fried scallions ~~ a combination sure to cure the jet lag!
