Happy Mother’s Day!
This year I’ll be getting together with my hens to be fretted over and doted upon by our children and husbands. Conveniently, unfortunately, Captain Splendid is out of town for Mother’s Day this year, so he won’t be there to help out the other dads for this annual event. So, I felt it was only fair that my daughter and I come up with a contribution to the meal.
I wanted to make something as sensational as the other moms with whom I’ll be celebrating, but easy for me. So, this morning I did a little trial run on a “recipe” I’ve been noodling for awhile and loved the results.
Sorry, no measurements here, just adjust the ingredients and quantities to suit your tastes and containers. I made mine in individual ramekins, but you could also make a larger version in casserole dish.
First, I drizzled a little olive oil and put a thin slice of butter in the bottom of the ramekins.
Next, I put a few lumps of cooked polenta {I bought a pre-cooked tube at Trader Joe’s}, and topped it with some fresh chopped tomatoes and herbs {I used oregano, chives and parsley}.
Next up, a tablespoon of Marinara Sauce, a fresh cracked egg and some grated Parmigiano Reggiano.
After putting the ramekins into a baking dish, I filled the dish with boiling water, a little under an inch below the rim of the ramekins, then slid it into the oven, which was preheated to 350 degrees.
Forty minutes later I pulled out a delectable little meal made even better with more fresh herbs and Parmigiano.
The marinara, herbs and polenta were the perfect pairing for the eggs but as I devoured this dish I was thinking of all of the other possibilities for this simple and satisfying concoction.
