My all time favorite dining situation is what I call “elegant food in a rustic setting”, and by “elegant” I don’t mean fancy, necessarily, I just mean food that is very, VERY good. This Taco Bar on the beach on Cabo fits this description perfectly. The structure is rustic, for sure, and the limited list of offerings, tacos or sliders, are elegantly delicious, fresh and composed of the best quality ingredients.
You can order your tacos or sliders with grilled chicken, flank steak or freshly caught fish, all delicious secondary layers, but that’s just the beginning.
A chilly bin next to the bar is loaded with a long assortment of superb toppings for customizing your chow, grated cabbage, shredded cheese, and pickled vegetables are some of the chunkier offerings. In addition you can dollop on some of their “special sauce”, sour cream and/or guacamole; finally, to really bump up the flavors one can drizzle on the most delicious chipotle sauce I’ve ever tasted, salsa verde, pico de gallo or salsa, then finish it off with a squeeze of fresh lime juice.
A selection of icy bottled beverages can be found in this cooler that is concealed in this weathered~looking, hand crafted box with legs.
Here’s another display of the local artisan talent, see the white? This is just a basic plastic cooler, but it has been covered with a beautifully hand tooled leather cover,
so richly tanned and worn. Isn’t it wonderful?
If you’re up for something a little more serious, they will blend up a margarita for you using the house brand Casamigos, a product created by “locals” George Clooney and Randy Gerber {Cindy Crawford’s husband}.
Since I’ve already started name dropping, I may as well go ahead and share with you the fact that while we were lunching at the taco bar George and his new fiancée were actually having lunch nearby at Randy and Cindy’s true casamigos. To see just how close these amigos are watch this sassy little short they filmed, meant to be a cautionary tale. I wonder if they will reshoot it to include Amal?
I’m sure they would have invited us over for a shot if they had known we were there….
Anyway, once you have your comida y bebida just the way you like it, you can just mosey up to one of these lovely hand crafted leather stools and settle in for one of the best lunches on the beach.
I’m seriously missing this place.

If you order them in advance you can also also enjoy churros at the taco bar, with the most incredible smoky caramel sauce and chocolate sauce for dipping.

It’s been a while to visit a place where you could spend your life even for a year. The beauty of the place also captures me to take some break and try the taco bar for a Saturday day off. This place gives me an idea how to spend the summer. Thanks for sharing!

I just saw the image of the Taco Bar on Sandy's post and had to drop a note. First off-isn't that just a divine stretch of beach? We've stayed a Secrets Marquis (in the background of your photo) several times. I've had some fun with the whole 'George Clooney' and Cabo thing on my blog. How fun that you were there when GC and Amal were there. The video clip is hysterical (I've posted it too) and I love your comment about re-shooting it. Fun stuff!
