Rise and shine…

Honey scented peaches, crunchy, earthy chunks of walnuts, salty~creamy feta cheese, herbaceous chopped tarragon leaves, a voluptuous drizzle of olive oil and a couple of grinds of pepper… it may sound a little strange, but somehow these flavors all harmonize beautifully to create a quick, healthy, well~balanced way to start your day!
Of course, you can compose this on a grander scale to serve as a brunch salad for a group; or add some arugula, and serve it as a salad for lunch or dinner, as we did for our summer solstice supper.
In case you missed it, here’s my favorite blueberry bowl, yogurt, blueberries, almonds toasted in olive oil and a drizzle of maple syrup.
