Honey scented peaches, crunchy, earthy chunks of walnuts, salty~creamy feta cheese, herbaceous chopped tarragon leaves, a voluptuous drizzle of olive oil and a couple of grinds of pepper… it may sound a little strange, but somehow these flavors all harmonize beautifully to create a quick, healthy, well~balanced way to start your day!
Of course, you can compose this on a grander scale to serve as a brunch salad for a group; or add some arugula, and serve it as a salad for lunch or dinner, as we did for our summer solstice supper.
