Okay, this combination may sound weird, but with peaches at their peak, I keep thinking of all sorts of ways to incorporate them into my daily diet. I’ve been making this tasty little breakfast bowl lately. It offers an exciting combination of flavors and textures, it’s quick prepare, and it’s healthy, what else do you need to start your day?
To make this dish~delish I wash and slice one ripe peach and put the slices in a small bowl. Then I top the peaches with crumbled feta cheese, pieces of walnuts, fresh chopped parsley, fresh ground pepper and a drizzle of good olive oil. I know, it sounds odd, but it is really good! I hope you have a chance to try it and let me know what you think. I find this combination of sweet, savory and salty to be a real winner!
