I know it’s Italian, but I found my self thinking of the word Pomodoro or “love apple” everytime I encountered a tomato in Spain. It is no wonder the tomato is included in so many Spanish dishes. These tomatoes, they taste differently than most tomatoes, I found them to be consistently more flavorful, sweet, tart and meaty.
Given that tomatoes are at their peak in many areas right now, I hope you don’t mind if I go on a little tomato tangent… for the next couple of posts I am going to share with you some of my favorite tomato tastes from Spain. I hope you have some lovelies in your garden or market and can try out some of these simply savory dishes from Spain.
“Pan con Tomate” {toast with tomato in Spanish}, is a simply delicious tapa that was presented at many of our meals.
To make it, a piece of rustic bread is toasted and a tomato half is rubbed over the coarse surface of the bread, leaving behind tomato pulp and seeds {some rub the bread with a clove of garlic as well}. Then, olive oil is drizzled over the toast and it’s sprinkled with salt and pepper.
“Pa amb Tomaquet” {this is how they say it in Catalan, a language used in many regions of Spain} becomes a lovely lunch when served with cheeses, ham and chorizo.
