While I am a strong believer in hand crafted meals, in the summer, I’m not above using good quality prepared products to buy a little more time to relax. My favorite recent find is these yellow roasted tomatoes from Trader Joe’s. They were absolutely sublime on this creamy cheese with the soft rind Mr. Splendid found at Costco {doesn’t it look like something from the corner cheese shop in France?}!
I hydrated these carrot and celery sticks from Trader Joe’s with cold water before displaying them. I find store-bought hummus tastes better when topped with a puddle of good quality olive oil {a sprinkle of chopped parsley is nice too}.
For the main course, for our solstice supper, I made a summer time staple, Flank Steak a Grecco. I marinated and grilled the steak the day before and sliced it just before serving it at room temperature. This could also be made with boneless, skinless chicken breasts.
Kale from Trader Joe’s provided a green bed for the meat. Aside the slices of meat I sprinkled on crumbled feta and pepperocini’s {from a bottle}. Trader Joe’s fabulous Tzsiki sauce made it so I had one less thing to prepare.
I made a version of my favorite peach of a salad…peaches, crumbled feta and parsley on a bed of arugula, simply dressed with olive oil and salt.
Warm pita bread rounded out the meal.

What a delightful solstice supper! Those lovely golden tomatoes, yum. And I think I was as distracted by the little hints of blue and white in the photos as I was the delicious food. Cheers!

Love this menu also, and you are right, there are so many great products around why not use them to round up a meal. If I have a dinner party I usually keep appetizers simple, mostly ready made and leave the fireworks for later on in the meal!
