Here’s a simple, satisfying breakfast bowl that I love to toss together when peaches are at their peak. While the list of ingredients if small, the complexity of the tastes is quite grand.
It starts with slices of ripe peaches. Their golden yellow color and sweet honey taste is a perfect way to start your day. Next, I crumble feta cheese over the peach slices, the cheese adds a salty Unami quality to the dish. Pine nuts pan toasted in a little olive oil bring a nice, nutty, oily crunch to the bowl and the heat of the nuts softens the feta cheese just a bit. For the final touch, I add a little swirl of maple syrup and a sprig of oregano for garnish.
That’s it, just peaches, feta cheese, pine nuts {or your nut of choice!} and maple syrup and you have a flavorful, healthy breakfast ready to devour. Look at my IG feed to see my prep with almonds->->->
