The sun coaxed me out to the courtyard today to work on the beds. As I planted and pruned, arranged, rearranged and watered, I felt a yearning to share the space and sunshine.
So I asked a couple of neighborhood moms to drop in for a glass of rosé. I love the concept of “drink’s” a quick, spontaneous little get together to transition from day to evening together.

And what to serve with rosé? Well, I’ve been fixated on the Cauliflower Popcorn at Grace Kitchen in Seattle lately, so I thought I’d come up with a version of my own.
After trimming all of the florets from a head of Cauliflower and washing them I preheated the oven to 350 degrees, then tossed them in a mix of:
3 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon of cayenne pepper
a couple of grinds of pepper
2 cloves of garlic, very coarsely chopped
Then into a baking tray went, along with peeled garlic cloves from 2 heads of garlic.
After roasting this mix for about an hour {shaking the tray a couple of times}, the florets came out tender, caramelized and flavorful and the garlic was soft, earthy and satisfying
{oh, and did I mention, healthy?}.
But it needed a little something more, so I quickly turned to my favorite secret ingredient.
A heaping teaspoon {or so} of Chili Garlic Sauce blended with about 1/2 cup of good quality mayonnaise {Best Foods/ Hellmans}
became the perfect dip for this fabulous finger food.
We sat in the courtyard and enjoyed the last of the sun before everyone moved on to their other engagements.
