Champagne Mangos
Oh, how we love the day when the Champagne Mangos come to market. We love their oval shape, soft skin and their deep, speckled shade of yellow.
Some fear a mango — unsure as to how to prepare the tender flesh waiting beneath the skin.
If ever there was a time when one should learn to cut a mango, it is now. The flesh of these mangos is thick and buttery in texture — and they are not stringy like the more common mango.
The flavor is like honey, with a mild spice complexity and a tart finish.
Cubing the mango is simple, once you know the trick.
Use a sharp knife, with a little bit of flex to the blade. With the mango lying on the wide side, place the blade on one side of the stem base.
Slice down the length of the mango, just skimming along the pit.
Next, place the blade on the other side of the stem base, and, again, cut down along the pit.
With the tip of the knife score the flesh with diagonal lines in one direction, and then the other. Cut all the way through the flesh just to the skin. Adjust the distance of the cuts depending on the size of cubes you desire.
Once cut, push against the skin to turn the fruit inside-out,
to reveal, splendid readers, your glorious, golden cubes of mango.
More than just a pretty fruit, these mangos, also known as Ataulfo mangos, are filled with sweet juice, vitamin C and dietary fibre.
Using the tip of the knife, sever each cube, as close to the skin as possible, and allow the succulent little morsels to drop into a bowl or dish.
These mangos grow in groves of trees where the warm breezes of the South Pacific blow, planted in the rich volcanic soil of central Mexico.
